The best way to stop spam is with Software designed for that function. That being said there are some Configuration Settings that will limit your exposure.
In the Server Configuration document Router/SMTP Tab > Restrictions and Controls Tab > SMTP Inbound Controls TAB > Inbound Relay Controls Section , populate the following fields with an Asterick(*).
"Deny messages to be sent to the following external internet domains: (* means all)"
"Deny messages from the following internet hosts to be sent to external internet domains:(* means all)"
This will prevent you from being an Open Relay.
Another measure you can take is to set the "Verify that local domain recipients exist in the Domino Directory:" field to Enabled.
Also in the Configuration Document > Mime Tab >Advanced Tab > Advanced Inbound Message Options Tab > set the "If each recipient's address does not appear in any address header, then add their address to the BCC list: " field to Enabled. this will help identoify how Spoofed messages are getting to the Domino server.
